Largement utilis\u00e9 dans la cuisine de la r\u00e9gion, il accompagne \u00e0 merveille les d\u00e9licieux <a href=\"https:\/\/enselvat.cat\/fr\/essencia\/poisson-bleu-de-la-llotja-de-blanes\/\">poissons de la Llotja de Blanes<\/a> , les viandes savoureuses, les recettes de l\u00e9gumes exquises ou se d\u00e9guste \u00e9galement comme plat principal. Venez d\u00e9couvrir pourquoi on l&rsquo;appelle \u00ab l&rsquo;hu\u00eetre terrestre \u00bb.  <\/p>\n<h5>Les origines<\/h5>\n<p>Autrefois, chaque foyer cultivait le salsifis et le r\u00e9servait \u00e0 sa propre consommation lors d&rsquo;occasions sp\u00e9ciales ou de grandes f\u00eates. Consid\u00e9r\u00e9 comme un produit de luxe, ce n&rsquo;est que dans les ann\u00e9es 1970 que ce tubercule pris\u00e9 commen\u00e7a \u00e0 se retrouver dans les restaurants et les commerces de la r\u00e9gion. <\/p>\n<p>Actuellement, il est principalement cultiv\u00e9 \u00e0 <a href=\"https:\/\/enselvat.cat\/fr\/municipi\/sant-feliu-de-buixalleu\/\">Grions<\/a> , <a href=\"https:\/\/enselvat.cat\/fr\/municipi\/vidreres\/\">Vidreres<\/a> et <a href=\"https:\/\/enselvat.cat\/fr\/municipi\/lloret-de-mar\/\">Lloret de Mar<\/a> , zones au sol calcaire, condition n\u00e9cessaire \u00e0 sa bonne croissance. On le trouve dans les magasins de fruits et l\u00e9gumes, les coop\u00e9ratives agricoles, sur les \u00e9tals des march\u00e9s et dans les restaurants de la r\u00e9gion. <\/p>\n<h5>Les propri\u00e9t\u00e9s du salsifis<\/h5>\n<p>Avec sa couleur ocre et sa hauteur de 30 cm, le salsifis est une plante bisannuelle. La premi\u00e8re ann\u00e9e, ses feuilles fines et pointues sont d&rsquo;un bleu-vert, la seconde, il se pare de fleurs violettes. Son go\u00fbt rappelle celui des hu\u00eetres, d&rsquo;o\u00f9 son surnom d&rsquo;\u00ab hu\u00eetre terrestre \u00bb. Sa texture douce et agr\u00e9able est compos\u00e9e \u00e0 90 % d&rsquo;eau. Il est \u00e9galement une source de fibres et de min\u00e9raux.    <\/p>\n<p>Aujourd&rsquo;hui, on trouve diff\u00e9rents produits alimentaires et condiments \u00e0 base de salsifis, \u00e9labor\u00e9s par des producteurs locaux&nbsp;: huile d&rsquo;olive, a\u00efoli, vinaigre, confitures, sauces et m\u00eame liqueurs de salsifis.
