A land of dairy tradition<\/strong><\/h5>\n

The region of La Selva has traditionally been a dairy region, especially the plain area where a significant number of livestock farms that produce excellent cow’s milk are still maintained today.<\/p>\n

The landscape of the plain is dotted with farms, surrounded by pasture fields and forage crops, which change their hue as the seasons pass, and which allow the cattle to be fed efficiently and achieve superior quality in all their dairy products.<\/p>\n

In La Selva we are lucky to enjoy up to 3 large livestock farms located in Salitja<\/a> and Ma\u00e7anet de la Selva<\/a> . They work day in and day out to obtain the highest quality milk and, in return, excellent dairy products. <\/p>\n

Cattle care<\/h5>\n

One of the secrets to achieving such high-quality milk is animal welfare. Taking care that the cattle are in optimal conditions is essential for a production of this level. It is well known that classical music relaxes and calms animals. For this reason, the cows on the Salitja cattle farm relax while listening to classical music in their stables, although we still don’t know who their favorite composer is or the work that moves them the most. <\/p>\n

The production of dairy products from La Selva<\/h5>\n

La Selva’s dairy products do not contain artificial ingredients and are made following traditional methods.<\/p>\n

The purest milk is used to make the dairy products of La Selva. Natural and flavored yogurts, ice creams, puddings, custards, cakes<\/a> , kefirs and cheeses are just some of the products made on the farms of La Selva. These products can be purchased in specialized stores in the area or on the farms themselves. <\/p>\n

If you want to see first-hand what day-to-day life is like on farms and how they work from the inside, you’re in luck. The main farms in La Selva have their doors open for excursions and visits to see and touch the livestock on the farms. <\/p>\n

In addition, training courses are held to teach all kinds of audiences: schools, families or professionals, such as production methods, the operation of the workshop and the sustainability of the farm itself. Visits that will delight the little ones, petting sheep, calves or rabbits while they play in rural spaces. <\/p>\n

The Milk Fair<\/h5>\n

Around the 3rd weekend of October, the Milk Fair<\/a> is held in Vilob\u00ed d’Onyar<\/a> , a date marked in red on the calendars of Selvatano farmers, where more than 12,000 dairy product enthusiasts attend every year. A good time to discover and taste the large number of cheeses, yogurts and other dairy products made with the purest raw material, the fresh milk of Selvatano cows. <\/p>\n

The properties of dairy products<\/h5>\n

Yogurt is better tolerated than milk because it contains less lactose and the fats, which are usually in small quantities, are predigested. In addition, the calorie content is relatively low. At this point, it is worth noting that the yogurts of La Selva are usually accompanied by fruit or hazelnuts<\/a> , which varies the number of calories. This product also provides calcium, phosphorus and vitamin B. <\/p>\n

For its part, cheeses provide high-quality proteins, significant amounts of calcium, phosphorus and vitamins. It is necessary to take into account the number of calories, especially in the fattiest ones, since cheeses usually have between 100 and 500 kilocalories per 100 grams. It is also necessary to take into account that matured cheeses have a much longer shelf life than fresh ones. <\/p>\n

The Plain of the Forest<\/h5>\n

La Plana de la Selva is the most important cattle concentration point in the region. Despite the high milk production, few farms are dedicated to the production of dairy products. Production is not automated and has a high component of human labor. No artificial components are used in the production of dairy products. <\/p>\n
